The models being as saturated as they were despite Sugimori's art having a different coloration is more likely to be the mistake, unless you can find any proof that it was an intentional decision made despite the existence of art made by Sugimori that used a different coloration.
I'm not even saying the models look better than the sprites, because most of them don't, but it's more accurate to say the sprites were oversaturated. Saying the models are washed out is like saying Sugimori's official art is washed out.
