Scorbunny will definitely become Fire/Electric type because of how much he looks like pikachu, the yellow flares to his ears, the motif of speed and electricity being associated with rabbits (i.e duracell bunny) and the fact he has an insulating patch on his nose to hold back his electric power.

Sobble is less obvious.
I feel like he will possibly be Water/Dragon because he looks like a lizard and can turn invisible like dragons in folklore.

Water steel is a sick typing, it is pretty much what allowed Empelon to have a niche in OU for so many years.

Grass Fighting is a decent typing because fighting gives grass the offensive power needed.

Fire Fairy would be unique, and unless fairy type is balanced in the next game with the introduction of stronger steel and poison types, it would be a pretty good type for a sweeper, the problem is that fire and fairy just add weaknesses to each other.

They also add resistances. Fairy isn't defined by being weak to steel and poison, it's defined by resisting and practically blanket-checking fighting, dark, and dragon types.

No it wouldn't? I mean, you're half right. But if Sobble's final evo was Water/Poison, then the Poison typing wouldn't hit Grookey's final evo super-effectively because the Rock typing would even it out. The reverse is true if trying to use Water attacks against Grookey final evo. The Grass typing would reduce the super effectiveness it would have on the rock typing.

Grass/Dark (the punk drummer motif has me convinced)

Fire/Fighting (I hate saying it, but it seems really obvious. Especially if it's gonna be based on soccer. Or, I realized, it might have a rugby inspiration.)

Water/Fairy, Water/Ghost, Water/Psychic (not sure for this one. The psychic type I don't have a reason for, other than obvious rock-paper-scissoring. Ghost sort of works for its ability to disappear in water. Fairy typing. if it was based on theatre, British theatre brings to mind: Shakespeare. And quite a few of his works contained fairies in them. And that would be creative, but ruins the rock-paper-scissoring.)
