XY were pretty abysmally easy. Sun and Moon offered a slightly, albeit only slightly, more challenging experience. But it was also riddled with cutscenes and the world design was fucking garbage, and the new pokemon were nowhere near as good as Gen 6's, so fuck, i don't know.

Difficulty of battles is really unimportant. World design is the most important part of the game and that's why Sun and Moon are the worst games.

it wasn't until I replayed gen 7 with USUM that I noticed how fucking tedious those cutscenes are, they're not too bad the first time but jesus the second time around. Some of my friends who claimed they love sun and moon couldn't even get through ultra sun and ultra moon lol.

The level design and overworld of Alola is probably the best thing about it. There are actual problems with Sun and Moon and real complaints that could be made about Gen 7 but you picked the most subjective, most hard to quantify aspect of the games that most people would actually disagree with you on as your ONE reasoning why they are the worst in the franchise.
