This is precisely how they explained the Fairy-Type coming into existence in X/Y. Sycamore did research that caused Fairy-Type to be defined into existence.
Absol is typed based on it's lore, but it's lore is just mythology which may or may not be correct. You know, like how in real life cats are bad luck depending upon color and location.
Just because someone believes something of something else, doesn't mean it's true though. Nor does it not being true change the fact that you think you have reason to believe it is until you don't meaning you'll classify it as such until you have evidence it's not.
Absol is seen as evil and therefore a Dark-Type because the disasters happen when it is near. The only thing that would change it is if further research were done to figure out whether Absol or the disasters are the chicken.
But this is a game, not real life where that research is actually happening. Unless they introduce some new type which they think Absol fits better, they're not likely to ever change it because they don't need to.
