yeah I'd say animal equivalent is pretty spot on

obviously some are different than others but it seems pretty clear that they are the equivalent of animals, if all animals could understand human speech and if some of them weren't actually animals

No. There are animals as we know them in the Pokémon universe.

Pokémon are essentially alien species (sometimes directly, sometimes they’ve somehow came earlier and evolved from Mews)

Yes. In the tcg you see some in older sets at least. Raichus dex mentions Indian elephants. You can see butterfly’s in some background battles in the 3D games. And they have concepts of things like mouse, cat, and chicken. As Hau says, give me some chicken skin.

Myamoto got the pokemon idea from his hobby of collecting insects, therefore pokemon are all bugs. Specially when you consider the regular animals in the anime and references in game to real life animals.

Plants and similar things are something of an exception. I.E. Fruit (like this mangosteen) and Pokemon based on said fruit (the Bounsweet line) are allowed to co-exist in the Pokemon universe, but animals and Pokemon based on said animals aren't.
