I actually kinda like the facial expressions at points, but I'd gladly go back to the more traditional art-style of past-gens since most everything else other than maybe Team Rocket is shit. Given that Galar has gyms and progression seems to be fairly straight forward, I think Ash will be doing the traditional gym quest.

We don't know if the "gyms" are like traditional gyms though. They're called gyms but for all we know, they could be closer to Alola's island trials, or something completely different.

Alola's progression was also "straight-forward", but the anime still did some things out of order, like Ash and co. going to Poni Island to rescue Lusamine before they had even been to Ula'ula Island.

That doesn't really say anything. "Strength" can be applied to Sun/Moon with Z-Moves as well, along with trials in place of gyms, and aiming to be champion also applies to Alola.

Trials aren't significantly different from gyms so I don't think they had anything to do with the decision to make the anime worse.

They are different. The trials are based around puzzles. You also don't fight the Trial Captain, you fight the Totem Pokemon instead.

The anime actually made them more like gyms by removing the Trial Captains and their "puzzles" and just having the Totem Pokemon and Kahunas.

There were puzzles in gyms. Every gym was a mini-dungeon. The anime already ignored this.
In practice, trials and gyms aren't significantly different. You're still adventuring around the region, traveling to 8 specific locations to overcome a tough battle and earn an insignia proving your skill.
