Ghost and Poison also seem like they'd look pretty unique just based on the type. Maybe also Flying and Bug depending on the exact theme or design they go with, but the possibility interests me less than those first three.
Everything else feels pretty lame. I'm not particularly interested in a Dragon Eeveelution even though I think it'd be more likely to happen before Ground/Rock/Fighting/etc.
