I remember trying to grind by beating up on decently leveled wild Magikarps but not getting much out of it. Does it net you less XP or something?

Opposing species doesn't matter outside e.v's. It's just that trainer battles grant you more exp outside of LGPE and wild Magikarp's are mostly low level.
