Fire should be more offense orientated, water should be balanced, and grass defense orientated. Gens 1 and 2 had a good balance in this regard. Of course, it is okay to deviate from this if you do it well but more often than not, one starter gets shafted when then do.

Ferrothorn, Tangrowth, Amoongus, Chesnaught, Shaymin, Tapu Bulu, variants of Roserade, Mega Venusaur.
Those are the ones that come to mind off the top of my head. Grass will always be one of the premier defensive typings because it's one of the main types that keep offensive ground types from sweeping.
