Breaking rock and denting metal is one of the most common ways of showing off superhuman strength in fiction. Along with martial artists breaking bricks.

It's a mix of those two tropes. Fighting type Pokemon are skilled martial artists and they all have superhuman physical strength.

Flying may be related to wind/air, but the type in and of itself is not that. An erosive chemical reaction would fall under poison type more than anything else.
