Can we assume UBs to be legendary pokemon in the main universe due to their stats and rarity? If so, that would make Nihilego the first natural poison legendary, right?

Probably not, even if the plot was slightly improved as a result (and even that's uncertain) it wouldn't make the games much better overall. They could have done more with the UBs, but making the human characters be them wouldn't be the way to do so without some extra effort. I suppose a plot change could have been the catalyst to put in that effort, though. It probably would have spawned some hot as fuck porn so that's a bummer

hard to say if the UBs are the "legendaries" of their world. some of their dex entries outright say they're common organisms in their world

It's a shame we aren't going to see any expansion of the Ultra Beasts in Sword and Shield. I mean, Mega evolution didn't make it past a single gen and I can't see Z-moves carrying on...
