If you use the cloyster image posted for example, see how the shading is very realistic, cloyster itself is kind of "chunkier" but the line work is more "pointy" with small details that make it more realistic. Just remembering the volcarona I mentioned, for comparison the shading on that is not as accurate with a distinct light source to showing the volcarona as a 3d object and the lines were very "round". It's like people see the splashes of watercolor and are easily fooled. I don't know what most of the artists who do this consider their work, I'd accept it as "Sugimori watercolor inspired" but the similarities are only at a glance.
