In-game, several Stage 1s are cooler than their Stage 2s and I now always have at least one Eviolite-mon. I think at this point Wartortle is clearly a niche favorite on this board (i.e. Wartortle > Blastoise) so we'll use that as the prototypic example (see also Braixen), but it's also a more interesting way of making the game a bit more difficult without having to go to the autistic lengths of shit like doing a Nuzlocke or a randomizer romhack.
I used Eviolite Munchlax in my UltraMoon playthrough, and I think it made the game more enjoyable;
- 85 Attack is not great, so I'm not OHKOing Pokemon. That means they get a bit more "screentime" and I get to see more of them, their movepool, etc. as opposed to sweeping the entire game and having no real idea of Pokemon typings, stats, movepools, etc. until I catch the thing (and then just quickly level it up for the dex and that's it)
- The huge bulk also means I am not making the game artificially difficult in a way that really just means more tedious visits to a Pokemon Center. I used to delay evolution without Eviolites and all that really means is having to 3-4HKO opposing Pokemon with a Baby/Basic, but yours is equally susceptible to being knocked out. I don't mind the occasional KO here and there, but the game does sort of punish you for it (less happiness means weaker Return, etc.)
Eviolite seems to have discouraged the possibility of cross-gen evos going onward, but as it is right now it's a really fun boost for a number of Pokemon in-game, and has had a fun niche in the meta
