What would be the one edition exclusive feature for you, that justifies buying both versions.

would probably make gen 8 the most replayable as long as the galar dex is around USUM's size

I like Red and what not, but not only is he not confirmed to be one, there's a 100% chance he's already been beaten to that title.
1000's of years worth of trainers would have yielded atleast one Pokémon master just to set the precedent in the first place.

Something like the different story, rival team from ruby and sapphire, the changes are enough that I would want to play both of them if the games were good enough.

Quality of the game is also the most important factor, if the game is really good I don't mind buying it twice to play all the differences even if they are minimal

The only thing that would make buying both versions worth it is if they did something akin to Ruby/Sapphire where there are two villainous teams one for each region but even more dramatically different than that, incorporate the location differences from B2W2 that we saw were dabbled with in Reversal Mountain. In addition Gym Puzzles and Overworld Puzzles would need to differ between each version, use the HMs as an effective way of gating off areas of the region that way you can swap the order between one version and the other meaning progression is different in chunks rather than the micro-changes which should be present but not the focus of the changes.
