Legendaries:

>The regional bird is a chaffinch, I haven't seen it's evolutions tho so I can't tell you how it's evolutions gonna look like.
>A route 1 bug is an another caterpillar. Evolves into a White Dragontail (a butterfly). Probably just a Bug/Flying.
>I've seen some other Pokemon too: a hamster, a corgi and a buffalo.
>There's only one new eeveelution: a Steel type.
Mechanics:
>No Galar forms, but alolans will be given to you through a trade with some NPC's
>No new Z-Moves, but they're coming back in the post game
>Mega Evolutions are coming back too, I'm not sure if there are new ones.
