Because it's a fighting type. They're mostly human-shaped, or at least vaguely human shape.
The anime sometimes does this interesting thing though where they give Blaziken actual shamo chicken-like proportions, which makes it look really... interesting. I remember seeing it in the Destiny Deoxys movie.
