For example, ORAS and XY were either developed at the same time or immediately after one another. They don't wait for the main games to be released before they start work on the next titles. That's how we get back to back releases. HGSS were probably worked on at the same time as or immediately after Platinum. They didn't wait to see how well XY or Platinum would sell before working on the generation's remake. So by that same logic, if Sword and Shield began development in 2015 when GF was rumored to have a prototype of the switch, then they likely finished most of the games' development in 2018. They'd then start working on the remakes (or a third version) for the generation immediately afterwards. So, either this generation's traditional remake or a third version started development in 2018.
Let's Go released in 2018 and took about 2 years to develop, So, they started working on it in response to the Pokemon Go craze that happened. It was an experiment to capitalize on its popularity. They had no idea that it would do so well. As such, they wouldn't let these games interrupt their planned work schedule for generation 8. By the time that Let's Go Kanto released, GF hay have already made some progress on this generation's remakes (or third version). They wouldn't throw away all of the work that they'd done.
Basically, I do think that we're getting more Let's Go games, but I also think that traditional Sinnoh remakes were already in the works before Let's Go released.
