I'm playing through Insurgence on normal difficulty right now and having a really good time (in Victory Road at the moment). Instead of doing any grinding, I just decided to fully EV train my team after that fourth gym and I think that really worked out nicely. I'm consistently behind the level curve by about 5 levels, but manage to win by playing smart and using Pokemon that are trained to their fullest potential. I'll probably do a hard run after this, which I'm looking forward to.
I love finding ways to exploit the system through unique strategies. If I made a fangame, I'd give it an unlockable brutal difficulty setting where each boss battle is its own puzzle and you have to overcome an overwhelming disadvantage through clever tactics. Stuff like getting the overleveled enemy pokemon to kill itself with Hi Jump Kick recoil or using conveniently available Unaware pokemon to counter overpowered setup sweepers.
