I want to replay the Johto games, should i play G/S/C for the nostalgia or HG/SS for the polish?

Depends how much nostalgia you have for the originals. I'm currently playing Crystal because I never went for it first time around but I don't think the GB games aged well.

If emulating, I would go for a gen2 romhack that fixes stuff such as moves, movepools, adds the phys/special split, etc.

Crystal on VC for sure, can even trade over to current gen and they changed it so you can do the Celebi event. Crystal itself is peak comfy and aesthetic and a good game allround.
Right now however I am playing Heart Gold, it's a good game and just as worth your time.
