OS=seasons 1-5 (maybe you should skip the johto filler episodes)
DP=seasons 10-13
XY=seasons 17-19

I'm sure I'll be labeled a genwunner, but I enjoyed the Kanto league. The pacing is good (8 gym battles and the league in around 80 episodes), it's our introduction to the Pokemon world, and there are some topics that I don't recall reappearing later in the anime. I enjoyed some of AG, particularly the gym battles and contests, but also the battle frontier arc most because of its pacing. XY really stepped things up animation wise, with some awesome gym battles, but the current voice actors are dog shit. Serena's voice was particularly grating in the dub.

Tracey is harmless at worst.

At least he doesn't drool over the female character of the day every single time. His three Pokémon also have much more personality (and usefulness) than anyone of Brock's.

But never mind that, the episodes are among the best regardless.

I caught up with the anime at the end of the year last year and I would recommend the original season with Ash, Brock, and Misty, and then skip to the Johto League, watch Advanced Generation plus Battle Frontier, then Diamond and Pearl, and skip to XY and XY&Z after it.

I watched the dub all the way up to the end of Battle Frontier and then watched Diamond and Pearl subbed although I heard the Diamond and Pearl dub is the last good one. I skipped Black and White because I heard Ash lost to a Snivy and I’m skipping the latest season because I hate the artstyle and the dub is really bad.

Kanto/Orange, DP and XY have the strongest set of episodes. AG has many good eps too, but falls slightly shorter than the others.

Johto has a mix of some great/funny episodes but way too many dull episodes. SM is a mixed bag if you like slice of life. BW is the weakest saga

XY is great. Even early XY has a lot of great/funny eps and the fillers aren't too bad. I've been rewatching it and so far the only dull up was XY14.

Good taste Anon. I almost suggested DP, but the pacing was terrible and there was way too much filler. At least they started experimenting with filler episodes having more weight by having Ash's Pokemon learning moves. However, around 50 episodes between gym battles is inexcusable.

The dub is only really bad when 4kids stops dubbing, which is when the Battle Frontier arc starts. And even then, that season and Diamond and Pearl are pretty good. BW is when shit hits the fan and it never gets better after that.

If you want mindless entertainment then check out the Johto episodes, those were fun.
