same applies here. You can kill any animal with a big enough rock. Bug being weak to it only makes sense if all bug pokemon are small.

Poison is a slow death.
It's not like how a karate guy instantly beats a normal guy or how water instantly kills fire.

Poison doesn't have to be SE on normal pokemon but they can poison them which is similar to real life, But poison kills bugs instantly because they are made to be extremely lethal on bugs. Have you ever been into gardens where people put poison on trees so bugs don't ruin them?
