How the fuck do pokemon not die getting stabbed by metallic blades/claws, set on fire by ridiculously hot temperatures, blasted with ultra high water pressure blast and crushed under the weight of boulders? Can pokemon just not die when in battle with their trainers?

The power of pokemon is overstated, and their trainers stop when they don't have the power to fight anymore, hence why they faint and don't die.

But what stops a pokemon from killing the other one in a single shot before the trainer stops them? Like hydro pump for example, this move could realistically shred through anything.

I know it's a kid game and they'll obviously never show a pokemon getting killed in the anime, but it's just weird to think about. If it WAS real, pokemon would just drop dead after every battle and you'll just need to get new ones.

The dex pretty much explains that pokemon do in fact kill/eat each other. You don't see it happen in game because gameplay mechanics.

I think Pokemon can't be killed by a move in one shot.
At most they faint and then they can be killed if they get attacked while fainted.

Pokemon is an idyllic setting; battles are just exercise, even serious wounds heal overnight, the power of friendship is a tangible force, etc, etc.

In universe, all Pokemon have a relatively insane recovery speed and physical durability, as well as a tendency to hold back from otherwise lethal blows.

The latter is most likely our Trainer's influence since they do a lot of other kindnesses we can't see or control, like feeding their Pokemon, or grooming/providing other required care.
