The only thing questionable about the Link's Awakening remake is the artstyle, particularly after the misleading animated sequence they introduced it with, but there's nothing wrong with mainting the layouts in the remake.
In Lets Go, the 1:1 map remake is genuinely bad, because not only has it been done several time before, it actively held back the features introduced, namely overworld encounters and walking/riding pokemon, which would have benefitted from wider, revamped routes.
