The characters didn't have defined names before gen 2 anyway. Lots of official gen 1 promo material calls Red Satoshi since that's one of his default names.

Those weren't their names yet. Prior to Gen 2's release, Red's official name was Satoshi.

It later became moot though because none of the starters are Red's signature Pokemon, his signature Pokemon is Pikachu.

While true, and it does render the conversation kind of pointless, it doesn't really impact the debate either. His signature mon being Pikachu doesn't mean his starter was Pikachu. Not to mention how Pikachu is far weaker than the rest of his team.
