IVs do suck. All they do competitively is take time to grind with no skill or strategy, and casual players generally don't even notice the difference with them. Plus it kind of dicks over casual players who like to be able to feel like their Pokémon aren't objectively worse than other people's, because there is no options or subjectivity in them.
Natures are fine, keep the NPC in Let's Go that gives you more control over them and they're perfect
EVs are fantastic from a competitive play standpoint, in terms of the amount of customisation they allow. They're not even particularly complicated but EV training guides tend to make it sound worse than it is, the big problem is the fact that it scales with level so you can't even say "you can add 127 points to your Pokémon's stats, but no more than 63 in any one stat"...
And there should be a menu that just lets you slide the stats up and down. I know it would kill immersion and stuff but it would do wonders for making competitive play accessible. The Poké Pelago is barely any different to that, it just needs a lot of waiting.
