Of course, if you delve into deeper details; we've never seen any kinds of microbes other than PokéRus, so there are still loose ends here and there but who wouldn't want to eat a juicy Tauros steak or munch on a Tropius' beard/banana?
Asian cultures always had the "Morally edible animals normally seen as pets" controversies around, so it's not really an unbelievable opinion to think the Pokémon are the one and only ecosystem here. Of course nobody would want to eat rare or useful Pokémons, so there wouldn't be a Squirtle grill found easily around the market but a hot, peppery Sharpedo fin soup in a shady back corner restaurant should be "Normal"
Also we canonically know people ate Slowpoke tails so there's also that...
