What's the point of Z-moves now that you can use super strong moves for THREE turns AND do it while having a temporary boost to your stats like a pseudo mega?

The Dynamax moves likely will be weaker, even with the offensive boosts, and many Z-moves have still have secondary effects

You can use one Z-Move and also go kaiju once per battle. They're not mutually exclusive. Also, Z-Moves will probably do more damage.

Going Kaiju probably has the same boosts for your 'mon as going totem.

This brings up the question--can you use Z-moves while in kaiju form? Maybe that's how going "gigakaiju" works?

The kaiju button is in the same spot that the mega and z buttons will probably be, so I imagine not. Either you need an item to go kaiju or you just aren't allowed if the mon is holding a mega or z stone.
