Does Dynamaxing change the Pokemon's HP stat?
Look at this picture. At level 15, Grookey has 61 HP. With 0 IVs that corresponds to a base HP stat of 120. With 31 IVs that corresponds to an HP stat of around 106.

That seems really high for a stage one Pokemon. Is it possible that Game Freak changed the formula for stat distribution?

Yes. Dynamaxing times HP stat by 1.5, rounded down. Not sure about the other stats, but I wouldn't be surprised if the same multiplier is used for those as well.

This seems likely.
All dynamaxing does is multiply all stats by 1.5 and turns all moves into big fuck you high damage blasts while all status moves become big fuck you protects turning it into rock paper scissors for 3 turns.

Also means that you can likely play the game without needing to Dynamax, just like you can beat the others without Z-moves or Megas.
You just need your mon to be strong enough to either beat through 1.5 defense of the enemy pokemon or beefy enough to survive 1.5 the attack from like 100+ power stab moves.

Seems like a fair challenge. Gives the gym leader 3 chances to try and one shot your mon which would balance out them only having like 2 pokemon while you have like 6.
Would make Nuzlocks hell if you could still even do them this time.

the takeaway I get from this is that grookey looks to be a physical based mon, since it's also seen using wood hammer.

same with scorbunny. I didn't notice anything about sobble, is it possible it's also a thumper instead of a special attacker?

No way Sobble isn't special.
Grookey is likely gonna be a slow bulky physical attacker, Scorbunny will be glass cannon with high speed physical and Sobble will be some kind of special, maybe with a focus on status (so bulky as well?)

in one screen sibble had 13 speed at lv6 but 9 spdef and I think 10 def. Two high speed starters with differing attack focuses sounds good after SLOWmons from Alola

Would make sense, Megas and Primals don't change the moves nor the HP, only the attacks, defenses, abilities and typing, while Dynamax lefts your attacks, defenses, ability and type untouched but gives you more HP and powered up moves
