The ultimate goal should be to be able to ride any Pokemon (when it makes sense) and traverse the world thanks to their unique abilities. Imagine a true open world Pokemon game with level-scaling so it doesn't matter where you go first. But if you want to cross the lake, you have to do your research and catch a suitable water type first. Maybe even introduce a skill system where you have to train the Pokemon first to unlock skills like surfing, strength etc.
This could potentially be a great showcase of the essence of what Pokemon is about: a world like ours, but filled with wondrous creatures. And TOGETHER, you conquer this world.
The bike is ok I guess... but not as cool as giving your Pokemon purposes outside of battles. Imagine earning money as a Wooloo sheperd, keeping the herd together while riding your trusty Arcanine. Or win races with speed trained Zebstrika, Rapidash and co. Extinguish wild fires with your water Pokemon, cut weed and cultivate your own berry farms with your grass types... the list can go on. Pokeride was a glimpse of such a future...
