Why do the starters HAVE to be Fire, Water, and Grass? Why can't they be Fighting, Psychic, and Dark? Or Ground, Steel, and Ice? Game Freak is way too obsessed with tradition.

Dark is IMMUNE to Psychic. Do you think Fire types should be immune to Grass?

Because Fire, Water, and Grass is the most basic of the elements. It's the best point to start beginners at and build up from there.

Being fair, throwing flammable material onto a fire would make the fire stronger, so it kind of makes sense that it should.

It has to work in reverse too. Rock, Fighting, and Flying is the only other type trio that works and it isn't half as marketable are Fire, Water, and Grass.

The rock type could easily be something cute like Rockruff where the only stone element is the collar bits but it's still a rock type, so it could be marketable. By they logic any animal could work, it doesn't have to be a literal rock. Kids would also associate it with rock-paper- scissors.
Then for fighting you could do something sorta humanoid so all those kids forced to do taekwondo or kung-fu will feel related.
As for flying, any cute bird can be super marketable, so yes, that trio could work depending on how good the designs are.

Most likely so new players have an obvious type triangle instead of something more obscure. Ground/Ice/Steel isn't as easily readable at a glance.

You could take the bw approach. You had a couple/few npcs to mention the triangle and what beat what. There was even a girl who did the starter rock paper scissors, and the first gym was even built around fighting the triplet that was super effective against you, while giving you a monkey that's super effective against them. I think that drilled in the triangle and general type advantage/disadvantage well.

Because it's the functionally best and most marketable triangle while also being the easiest for kids to learn. Change for the sake of change isn't good, this is one of the traditions that should be kept.
