Also it's the opposite of what you said, they translated very well to the gameboy. If they had made them cluttered with patterns and color contrasts, it would have looked really bad.
I'm not making value judgements, everyone prefers what they prefer. But gen 1 and to a lesser extent 2 straddled a very fine line between "cartoony" and "natural" which is not often done anymore. Today's pokemon are either "very cartoony" (aka neotenous) or "very natural" (think something like dragalge, where it's basically not cartoony or cute at all anymore). Either that or one of the other trends.
Personally, I think that if gen 5 or 6 pokemon had been introduced back in 98, I wouldn't have been into them as strongly. I think it was the naturalism with just a bit of cartoony spice that got me interested. I was never a fan of proper cute shit, nor did I like super-realistic cartoons (GI Joe, action figures, etc)
