You can turn off exp share. You can choose pokemon you like. You can avoid "overtraining." You are still going to blow through the game without effort. You have to impose SERIOUS restrictions on yourself to have any challenge in these games.

I did a mono ice team playthrough built around maximizing hail with exp share off, and I still didn't have an issue.

I'm playing through diamond and my only "restriction" is that I picked turtwig and I'm having some difficulty with it. I'm mostly under-leveled just battling trainers and ignoring wild pokemon

Ice is the worst type in the game for a pokemon. Ice MOVES are different than ice POKEMON. Their stats are awful.
