Do natures really matter? I know there is a difference in stats, but is it really THAT important?

A little bit, yeah. I'd argue that for the vast majority of mons, it doesn't matter at all. But for the few you can't replicate/breed more of and/or can only get one of, I'd reset just in case you ever decide to get into competitive battling.

You don't HAVE to care much about natures to win some battles but you'll be at a disadvantage every time you're up against someone who is using Pokemon with beneficial natures for whatever roles the Pokemon are filling.
