The stadium fights are very cinematic with their drawn out animations, announcer and effects, but that would be SHIT in a mainline game because mainline Pokemon isn't JUST fighting.
Like, a single round of attacks in Stadium takes something like 20 seconds whereas in the regular game they take at max 10. That's not a huge difference alone, but remember this happens THOUSANDS of times in a playthrough. Those 10 seconds of difference really add up.
Also, you have to see many of these animations thousands of times over as well. That's why they don't have them be these big motions for getting hit or doing attacks. The animations for each pokemon are limited to a couple seconds so that things keep consistent and don't get in the way of the progress of the fight while still providing some flavor to each pokemon's movements.
That all said, they SHOULD make more than one special/physical animation per pokemon, but they should do that while keeping them short and to the point like the ones they already have.
