Why is rock weak to water?
I mean our planet is one big rock covered in water and its doing fine. And for all other planets we know of, all the water has either evaporated or frozen

Because water erodes rock. It's not exactly a speedy process that can be replicated by squirting water guns at rocks, but that's pokemon.

Water only kills fire because it takes the heat out of it. Some fire Pokemon can reach temperatures where water wouldn't even exist as a vapor. Fire should be SE against water.

If you cover posion in sand it can't poison you. If you have toxic residue, as long as you can keep piling soil on top of it (as Ground Pokemon can) it's inoffensive.

Ground has the property to purify water from pollution. There it is this known experiment when they pour dirty, black water on dirt and it comes out pretty clear.

Ice type isn't meant to be literally blocks of frozen water, it's the absence of heat. Ice Beam isn't just a beam made of Ice, it's a super cold beam that freezes anything it touches.
And what happens when Water touches something cold? It freezes into more Ice.
