Have there been any Switch Rom Hacks?

I mean... the data is just about all in Let's Go besides models right? If a few willing people got together, couldn't we just slowly patch our way to an almost perfect game.
Add in the models of Pokemon, even if they are just still bots at first. Make new towns/replicate old towns and import in music. I know it would be quite the task but there has to be others thinking the same thing.
