Tapping a Pokemon individually like they're show in the OP allows you to specifically search for that Pokemon, in a one-off form of encountering where a single patch of grass shakes and you have to use the 3DS circle pad to slowly creepy up on it. Using this you could get better stats, egg moves, hidden abilities, and also chain shinies.
