She still only had 2 Pokemon and really Miltank was the only reason people thought she was tougher due to it being able to sweep unprepared teams with rollout while having only one weakness in fighting, a type not many people would be using at that time.
Also, the Dynamax stuff does drag things out but it also gives the gym leaders something to actually threaten with. Like, in the demo there's been plenty of people trying to go at Nessa with Dynamax Yamper only for her to Dynamax Drednaw and take the pup down. While this wouldn't matter to most adults that know the games and build their teams to not rely on one pokemon, this could give a lot of challenge to younger or inexperienced players that can't respond to suddenly losing their ace AND having rain now set up for Nessa to benefit from.
Personally, I try to make my playthroughs more interesting by limiting my team when I play to only adding Pokemon I really want to use, no filler or getting something for just type advantage. So I will probably be going at her with only 3 Pokemon which could make it a pretty fun challenge.
Not everyone likes doing self-imposed challenges, but it works for me.
