It's not all Dynamax that do it. It's something the Max Raid Pokemon can do to your pokemon.
They can nullify abilities and stat boosts on all the pokemon facing them,.
Also they can put up a 5 hit wall that severely reduces damage they take for 5 hits (meaning multi-hit moves will have a real use in raids).
Also, apparently if your pokemon faints in the raid, you can still participate by cheering the other Pokemon on giving them a small heal.
