We don't.
It's difficult to determine an "ace" for these trainers with barely any screentime.

Usually an ace is the last Pokémon on the Trainer's team, but that hasn't been consistent in a while. Gen I is easy enough.

If the character has a starter and starter replacements, you could usually remove those and examine the rest of the team. But Masters doesn't seem to be consistent on that. Red's signature here seems to be Charizard instead of Pikachu. Green has his Pidgeot, but other protagonists and rivals are shown to have starters.

Kukui's main would be Lycanroc (Midday Form), but they could mix it up and give him Incineroar. Hau's main is Raichu (Alola Form), but what if they gave him a starter instead? It's easy enough to give Gladion the default Silvally (Normal), but who knows. The Alola protagonists don't have NPC teams so they'd definitely be given starters (Rowlet for Elio and Popplio for Selene probably).

My guess for Oak is that he has Bulbasaur's line. Would leave Squirtle for Leaf and Red obviously has Charizard, and it would work out as Blue is getting Pidgeot instead of a starter.

Depends if it's player Calem or rival Calem. NPC Calem's main would probably be Meowstic (Male) and NPC Serena's main would be Meowstic (Female). We see Brendan as his player character version since his dad is Norman, but does that mean May will be the rival version? There's a lot of potential for variations with three designs, three starters, and two roles. There could be 18 versions of Brendan and 18 versions of May, and that's not even counting Pokémon outside of starters like Swellow.

It's her main in DP while her main in Platinum is Froslass.
Volkner's main in DP was Luxray and it was changed to Electivire.
Fantina: Drifblim > Mismagius
Bertha: Hippowdon > Rhyperior
Flint: Infernape > Magmortar
Lucian: Bronzong > Gallade

Roark could have either Cranidos or Rampardos in the same way Falkner could have Pidgeotto or Pidgeot or Bugsy with Scyther or Scizor or even Roxanne with Nosepass or Probopass.

We saw Calem in the trailer. He has the hat, it's not the rival. It seems hard for me to believe he'd get anything but a starter based on the Pokemon other protagonists have gotten so far.
