So outside of dex issues, one thing I haven't see anything on and they will have no excuse not to have is multiple save files, will they have multiple save files?

different switch profile acts as a different save. otherwise unlikely.

at the OS level, the Switch allows each profile to have its own save file, unless specifically constructed otherwise, such as every profile on the system having it's own character, but sharing the same town in the upcoming Animal Crossing. There's no reason Pokemon would deviate from this, as the Let's Go games already behave this way.

Technically, yes. Only one save per profile, but you can have multiple profiles on Switch with unique save files.
