From how I read the leak, it looks like Scorbunny starts as a Fire Type but ends as a pure Fighting Type for its final stage. So Sobble might turn from Water Type to pure Psychic Type, with Grookey turning from Grass Type to pure Dark Type.

Let's just say that Scorbunny's middle evo is just pure fire type, unlike all fire/fighting starters before which always get its second type in middle evos.
It's a safe bet that they will get second type in last evolution. Or they all stay mono types.
