Genuinely popular. Keep in mind that people who don't care about Pokemon in the slightest will recognize Pikachu, and those are the people that make up the majority of the consumers. Mothers buying games for their kids, girlfriends buying games for their boyfriends, old people buying toys for their grandkids, etc.

The anime contributed to it, but its popularity among kids in the first place is why they decided to make it Ash's starter.

They didn't just pick a Pokemon at random, they picked Pikachu specifically because Japanese schoolkids liked it

Literally everyone knows who Pikachu is.
Even your great-great grandparents who've long gone senile know who Pikachu is despite not being able to recognize Mario, Mickey Mouse, Winnie The Pooh or Hello Kitty.

I would like them a lot more if they legitimately had something different about them in the way that Mimikyu did or were actually useful (Azumarill).

I would honestly love for a next-gen Pikaclone to end up evolving into the pseudo-legendary though.

It's still popular. Believe it ot not, there are plenty of middle-aged women in the US who don't even know that pokemon games exist but still buy Pikachu dolls for themselves.
