Greetings everyone, I am a French translator who did a good chunk of the NPC translations for the new games. I wasn't given access to any gameplay but I did see screenshots and caught extra information.
The full Galar Pokedex reaches over 500 pokemon including 90-100 new Pokémon, 20 new Galar forms and 30 Gigantamax forms
A new bird pokemon (Rabouche in French) pairs up with a red fish pokemon (Mangeur in French) that looked very similar to the Red/Blue gym logo.
Eternatus doesn't look like the hillside pokemon but very similar. It actually shows a ritual that involves Meltan using it`s power with Eternatus to unlock the full potential of Dynamaxing.
Scorbunny`s final evolution is feminine
A new water-ground frog Pokémon helps you travel across a muddy swamp
All new Galar forms are from Gen Two. The whole Oddish line (including Bellossom and Politoed)
Ledyba and Spinarak get Galar forms but are version exclusive
Gengar`s Gigantamax form makes him look like the fat ghost from Casper
