3D models aren't made in engine. In fact, since they're made outside (usually in Maya/Max or similar) they tend to be pretty engine-independant.
Somewhere on GF's server is a folder full of those 3d models. Alongside each model is a set of animations, running loops, fight moves, whatever they have. Also for each one, is a series of textures, alternate versions, and sections like versions of eyes (in a 2x4 grid, so open, wide-eyed, blinking, scowling, etc). Each mon will have their own folder with those files.
What I suspect happened, and based on a level of catastrophic incompetence, is that they tried to export a package from their latest mobile game, and into SS.
In theory, this can save set-up time, keeping the assigned moves from animation frames that they had from the last game. You'd end up with hundreds of baseline prefabs, one for each mon. I'm 99% sure this would fuck up at least moderately if tried.
As for the 3d models/textures/etc? It'sd not like we've seen any big gains so far, and honestly wih the quality of the existing models I wouldn't bother upgrading them, beyond maybe some textures re-rendered at higher res from source vector graphics. They're surprisingly well done.
So when they say they had to rebuild all 3d models, what they actually mean if they had to re-assign a bunch of shit for each monster's base prefab.
