Self-imposed level caps. I cap myself at the next gym leader’s highest level Pokémon. Also grinding is boring and most games aren’t difficult even if you Nuzlocke them.

Add more rules, like level limits, not using items in battle, not using Pokemon centers, and not using super effective moves.

In my recent runs I've made exp a finite resource by not allowing myself to beat wild pokemon or rematches. Experience management and distribution becomes an important aspect of the run and adds another layer of decision making. I doubt I'll ever go back to using level caps.
