Final evolution of Sobble will be Water/Dragon, the final evolution of Grookey will be Grass/Fighting and Scorbunny will not be a Fire/Fighting but just Fighting.

The largest gen represented in Sword and Shield will be gen 1, only 12 Pokemon will be cut from this gen.
All starters will make the cut, the majority of legendaries as well (except Heatran, the Regis and some others that i can't recall)

The Champion is actually not all that good and makes part of Team Yell.
