Switch is a fundamental mechanic on a basic level of actions, where the advantages and disadvantages are within prediction from you and the opponent.
Dynamaxing/Gigantamaxing is a mechanic that will increase at least HP (although it will likely also increase all your other stats as well) and gives you super powered versions of all attacking moves, the likes of which can set terrain, hazards, weather, stat boosts for yourself, stat decreases for your opponent, healing allies, and much more.
Switch is, while not required, very beneficial as it allows you to keep your Pokemon alive for longer (unless the opponent has pursuit), or allow you to not be walled, as type match-ups can heavily influence or guarantee that your Pokemon will live or die.
Dynamaxing/Gigantamaxing, however, will make you far more bulky and hit like a truck will also supporting yourself and your entire team. There will be many scenarios where people will be forced to Dynamax so that they don’t immediately lose the game, and even then, that waste of Dynamaxing could cost them the game depending on the opposing Pokemon’s team.
While yes, you could say switch can win you games, switch also requires heavy amounts of prediction, calculation, and mind games to effectively win you games, while you can just Dynamax a sweeper with several stat boosts already and just plow through entire teams.
