With all the secrecy and carefully timed marketing/reveal of new Pokémon/features, they wouldn’t risk one of those randos pulled off the street not to go straight to the Internet with what they saw. NDAs be damned, they’ve had enough of a problem with leaks the past few generations and they’re absolutely aware of that.
It’d be one thing, maybe, if they were pulling people randomly to play test the E3 demo, as that’s already been covered multiple locations (and the only thing unrevealed is Impidimp), but a demo with THAT much new stuff? Absolutely not.
