A console game is made once and delivered (unless you want to make expansions or DLC), that means developers can hire based on a project, have a given budget and expected profit, do temp contracts just for the project and so on. Most profitable mobile games act as a service that's constantly getting new updates, meaning you need a team that's permanently working on the game.
Even if you make a successful mobile game, that's little reason to stop working on your other products if they're still profitable too. In reality, every profitable product you have is good even if one is more profitable than the others, because they all simultaneously serve as products AND advertisements for each other. Many people bought new pokemon games because of Pokemon GO, while many people played Pokemon GO because they enjoy mainline pokemon games. And that's also true for all other Pokemon-related products like the anime, the manga, Mystery Dungeon, Pokken, even Smash.
Lastly, mobile games are relatively still recent and it's unknown if it'll last or if it's just a trend.
